OK KristaRose and I made this. KR said this recipe needed a little help with flavor. My adaptations are listed with the #. It turned out WONDERFULLY! I would say you could substitute Chicken for the crab meat as well. If you want to cut back on some of the calories it's not a problem to use Maricela Whip Light and lighter cheeses as well.
Crab Brunch Casserole "A delicious casserole - elegant enough for a Sunday brunch!"
Prep Time: 15 Minutes Cook Time: 1 Hour Ready In: 1 Hour 15 Minutes Servings: 8 (change)
INGREDIENTS:
* 2 eggs, beaten * 2 cups milk * 2 cups seasoned croutons * 8 ounces shredded Cheddar cheese * 1 tablespoon dried minced onion * 1 tablespoon dried parsley * 1 pound fresh crab-meat # fresh cracked pepper to taste * 1/4 cup grated Parmesan cheese # 1/4 cup of Miracle Whip dressing # 2 or 3 tea spoons of Tabasco
DIRECTIONS:
1. Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking dish. 2. In large bowl, mix the eggs, milk, croutons, cheese, onion, and parsley. Stir in the crab-meat. Season with salt and pepper. Spoon into the prepared baking dish, and sprinkle with Parmesan cheese. 3. Bake 1 hour in the preheated oven, or until a knife inserted into center of the casserole comes out clean. Serve immediately.
