Just picked up this recipe card at the groc. store tonite. Slow Cooker Taco Meatloaf 2/3 cup finely crushed tortilla chips 1 cup chunky salsa [your choice] 1 egg beaten 1/2 tsp. ground cumin 2 lb. ground beef chuck 1 cup shredded cheddar cheese [your choice] Cheesecloth 1. In medium bowl stir together crushed chips 2/3 cup salsa- egg- cumin add beef and cheese- mix well Place about 2 pieces cheesecloth [each about 24 in. long] crosswise on worksurface place meat mixture on center of cheesecloth firmly form into 6 or 7 round loaf. 2. Useing cheesecoth, place loaf in slow cooker Top with remaining 1/3 salsa Cover and cook 6 to 8 hr. on low or till 170-F remove- let set 5 min. remove cheesecoth- slice- enjoy. Serves 6 Yea right, I already sampled half to see what I would delete or add. ;D Alice I think I would just use some cookinking spray at the bottom or just 1/4 cup water to steam a little to moisten. Just me
