Some recipes for a Luau. OK I got these from another board that I love to post on. Just had to share them all with you!
Hawaiian Baked Beans (serves 30)
These are *really* good and so easy. I mixed everything together the day before and then popped them in the oven. They could also be baked the day before and reheated since they're almost better the second day. Watch that they don't get too dry but if they do, add a little pineapple juice.
6 (16 ounce) cans great northern beans (half of cans drained of moisture)
2 cups chopped onions
2 cups dark brown sugar (not packed)
1 lb cubed cooked ham
1 1/2 cups ketchup
1 cup crushed pineapple, drained
4 tablespoons prepared mustard
3 tablespoons cider vinegar
Preheat oven to 350 degrees F. Mix together all ingredients. Place in a baking dish(es) sprayed with cooking spray. Cover with foil. Bake at 350F for 1 1/2 hours. Remove foil and bake for 20-30 minutes more.
Ono Macaroni Salad (serves 16)
Ono, in Hawaiian, means something close to "d**n good". This can also be made the day before but you may need to add a little more mayo before serving since the pasta soaks it up overnight.
2 packages macaroni
1 lb. Imitation crab (chopped)
1 box frozen peas (cooked)
4 small stalks celery
8 hard boiled eggs (chopped) I tossed half the yolks and used all the whites.
1/2 tsp. Relish
salt/pepper to taste
4 chopped green onions
1 1/2 quart of HELLMAN's Mayo (I used reduced fat)
Boil macaroni but do not overcook. Drain & cool. Add all other ingredients to cooled macaroni except mayo. Add mayo last & stir well.
Hawaiian Corn (serves 20) This is sweet and yummy!
10 cups sweet corn
2 ½½ teaspoons salt
1/3 cup butter
2 ½½ cups coconut milk
4 cups coconut
Combine all. Heat slowly and thoroughly but do not boil. Serve warm or cold.
Banana-Pineapple Bread (serves 16)
This is SO GOOD served warm with honey butter but can also be made in advance Mmm, I think I may have to make some this weekend, I'm getting hungry just thinking about it!
3 cups all-purpose flour or bread flour
3/4 teaspoon salt
1 teaspoon baking soda
2 cups Splenda sugar substitute
1 teaspoon ground cinnamon
1 cup chopped nuts (macadamias are preferred)
3 eggs, beaten
1 cup canola oil or olive oil
2 cups mashed ripe bananas
1 (8 ounce) can crushed pineapple, in its own juice,drained
2 teaspoons vanilla extract
2 tablespoons honey
bakers joy cooking spray (or extra flour and shortening)
1. Preheat oven to 350 degrees.
2. Spray two 8 1/2 X 4 1/2 X 3 loaf pans with Bakers Joy (or grease and flour) and set aside.
3. In a Medium bowl,combine the first 5 ingredients and stir with a wire wisk to blend well.
4. Stir in nuts to combine and set aside.
5. In another bowl, combine the eggs, oil, mashed bananas, pineapple, and vanilla. Stir lightly just to mix.
6. Add the wet ingredients to the dry and mix only enough to moisten the dry.
7. DO NOT overmix or your bread will be tough and heavy.
8. Its ok to have some lumps.
9. Spoon the dough into the three pans,making sure to divide it equally between them.
10. Bake for 45 minutes.
11. Insert a toothpick or bamboo skewer into the center to test for doneness.
12. Once done, put pans on wire racks and cool for about 10-12 minutes.
13. Turn the bread out carefully onto the racks.
14. Allow it to sit for about 15 minutes upside down, then carefully turn right side up to finish cooling.
