Southern Peach Cobbler
8 Fresh peaches cut into slices 1/8 cup white sugar ¼ cup brown sugar ¼ teaspoon ground cinnamon 1/8 teaspoon ground nutmeg 1 teaspoon fresh lemon juice 2 teaspoons cornstarch
In a large bowl combine peaches, white sugar, brown sugar, cinnamon, nutmeg, lemon juice and cornstarch. Toss to coat evenly and pour into a 2 quart dish. (approximately 8 x 11) Bake in preheated oven for 10 minutes. Remove from oven and drop the following by spoonfuls over the top.
1 cup flour ¼ cup white sugar ¼ cup brown sugar 1 teaspoon baking powder ¼ teaspoon salt 6 tablespoons butter, chilled and cut into small pieces ¼ cup boiling water
In a large bowl combine the flour, sugars, baking powder and salt, then blend the butter in with your fingers or a pastry blender until the mixture resembles coarse meal. Stir in water until just combined.Drop by spoonfuls over the baked peaches.
Next sprinkle a mixture of 3 tablespoons of white sugar and 1 teaspoon of ground cinnamon over the top. (this is good with out this topping too)
Bake at 425 degrees until topping is golden, 25 to 30 minutes
